These things are opening all over the place
Qdoba haven't done well in SoCal where people are familiar with good mexican food, the one in Simi Valley has already closed shop - last I heard they were owned by Jack-in-the-Box
Taco del Mar is just plain nasty and both in Ventura have closed - they don't even cook the food onsite, it's just warmed up in an oven
Moe's Mexican food is another fastfood mexican chain that opened and then promptly close shortly after
I would consider a Chick-fil-A resturant.They have been opening these up around the northern Ohio area lately.The local news show these fricken people camping out overnight because the first 100 people get free chicken sandwiches for a year.These are like gold mines but they are closed on Sunday as the founder has it that way.Maybe others could chime in and share that story.
a couple non-restaurant ideas would be a laundromat or a self-serve carwash
They both require very little labor and much easier to run compared to a restaurant

What is cost limit ?, it might take a million for some of these burger places
How about a cupcake shop. Really, just make some bomb ass cupcakes and make them expensive, like 3-4 bucks a pop
