I absolutely love salmon with a hefty dose of coarse black pepper
(But man does salmon screw up a BBQ. That smell sticks around forever.)
Did salmon last night on the grill. Bought the planks to grill on, soaked the cherry plank in water for a few hours, then wiped it on both sides with a little olive oil, put the salmon on the plank, pepper and lemon. Closed the grill and let it go for about 20 minutes. Was excellant and no mess or smell withthe BBQ. Reuse plank by just washing it, of course the bottom side is burnt, but that is how you get the taste. Planks were bit pricey at $20.00...but should last many, many meals.
Salmon and tuna are great.

when you get a chance try having (seared tuna ) (sushi places normally have this also. )

Seared Tuna with Wasabi-Butter Sauce
Marinated tuna in sesame oil, soy sauce, ginger, garlic, scallion, and lime juice. Seared fish for 1 minute per side with peanut oil and a really hot cast iron pan. Served with the wasabi-butter sauce over fennel salad with parmesan and naval orange slices. The sauce goes great over broccoli.
