Halve a peach, grill it open face down for 2 minutes, flip it, fill it with brown sugar, 2 more minutes on grill, take it off, put in a bowl, and scoop some vanilla ice cream on it.

How do you guys get a good skin on your chicken from the bbq? Cant's seem to get it to have that nice crunch to it. Lots of heat and the bbq sauce burns. Too low of heat and the skin is slimy.
