Scalping is playing both sides of a game with odds that guarantee a profit. I'm not an expert so i'll let others answer the other questions.

In order for you to scalp succesfully, first you'd have to guess where the line is gonna move in a game and second you should have to bet a considerably amount of money to make a decent profit. Example
A team -115 11.5K to win 10K
The line must move in your favor untill it reaches something like -130 and you have a comeback of +120 so you would bet
B team +120 9.8K to win 11.76K

You make $200 before the first pitch is even thrown.

Works something like that...

The % you win is so small, you need some real money to get by. You can play Subzero's way, making a play and hoping for the line moving in your desired way, but that is a gamble in itself. Or you can have lots of outs, depending on their respective money situation, that alone can provide guarenteed profits. Like the Orioles +104, Drays +105 at two different books, automatic 4 or 5%...
Everyone doesn't do it because of the required cash, workload, etc.. But if you are a full timer with a little bit behind you, its easy money, just not a lot of it..

How often do books cross the line and go from a line like -120 to +115 or something like that? Don't they avoid this to try to prevent this?

You won't see many lines move that way from -120 to +115 unless there is an off pitcher for example in baseball.What he meant was wait for your -115 favorite to get bet up to -130 then the price on your dog should be +120.

So just an example here you bet 115 to win 100 on the fav then you bet 100 to win 120 on your dog.So if the dog wins you can make a five dollar profit.Fav wins you would break even.Obviously it takes a lot of money to make any decent amount.You will also need a lot of different books.

scalping is where you take a knife and cut someones scalp and hair off of their head. i think it was originally done by the indians.

I thought the term scalping mostly refers to reselling tickets for a good profit-mostly concerts or sporting events.

I guess another term is middling-such as in football when the line moves 4 or 5 points one way and waiting for the line to shift dramatically the other way-then betting it on both spectrums. Hoping that the line falls right in the middle and winning both bets.

A lot of pros look to lock in profits. It takes big money and a fairly large # of books.
Fezzik's article points out a good example on the Smarty Jones odds and the Belmont.
So good opportunities do come along, but you have to know when it's worth it!

Middling a game became almost impossible when intenet bookies invaded gambling heaven. In the golden age local books would sometimes throw out really bad lines and a middle would not be uncommon, especially in college baskets.
In fact, some local books were so hungry for huge action they would make bad lines on purpose. A very stupid mistake and cost some wise guys some real money. Also the locals usually had favorite teams and this sometimes colored their judgment on the lines. Yes, if you can find a middle of 1.5 or 2 today it is almost too hard to believe. A friend of mine tells me that small casinos in Vegas can be middled if you do your homework and run around like a clown. I don't know if he is correct because I was never there. But all in all I think the days of serious middles are gone forever.

Maybe it's offtopic but I studied scalping for a long time and I can say that this art is slowly dying...But there are some new techniques exists.
