A full list of countries that interest you would be helpful, but from those, I'd say Brazil.
There's plenty of people who need help and you can enjoy yourself on your free time. If you don't plan to have any free time and want to contribute the most to your CV, choose some country in Africa (Kenya comes to mind).
I would personally choose one of the slum towns near Rio de Janeiro in Brazil, but if you're going there, learn at least enough Portuguese to be able to communicate with those who don't know any English (or Japanese, that's their second language if I'm not mistaken) - in Africa you would most likely need a translator.

nice....i would think it depends a bit on the type of stuff you like to see and do, but had a great time in Indonesia when I was there for a month, Thailand great as well (but clearly better experts on this board on Thailand than me). I liked Brazil, but not nearly as "different" as SE Asia. have you considered some of the places in southern africa? could look into Lesotho which land locked by south africa...they really need help and it is close enough to some fun areas (beaches, safaris, etc)....

appreciate the input guys. it isn't as much vacation as it is working, really. i have never been overseas so i couldn't even tell you much about culture that interests me. i'll have translators present wherever i land, so language barrier shouldn't be an issue. it's a pretty cool scenario…a few years back someone row-boated his ailing wife 20+ miles to get to our clinic. makes you feel good (although i wasn't there.) i've heard vietnam is a great place to go. anyone been to madagascar?
One of the worst things I've ever seen Tate. We were at a remote village. Took us about 3 hours on a dirt road to get there. People were lined up when we arrived in about 105 degree heat. Guy has a baby wrapped up and said the baby was sick. Doctors took the baby in for an evaluation and there was nothing they could do. Baby died right there in front of us. Guy picks up the baby and walks off and I said "where's he going now." An interpreter told me he was taking his baby home to bury him/her in the front yard.
