OT -curry blends - Singapore vs Indian

I know that Indian chefs worth their salt grind their own curry blends but today I had some of those Chinese curry beef buns (3 for a $1) and it really hit the spot and would like to add that curry to my cupboard. They said it was a Singapore curry and not Indian.

I did some googling and read that there are several curry styles in Singapore due to various cultural influences: Malay, Indian etc so does anyone know of a unique "Singapore" curry blend? I've actually had one of those Lipton Singapore Noodles Sidekicks and I do like that curry despite being a mishmash of chemicals, preservatives and god knows what else.

I lived in singapore for 8 years, and man to I love Singapore Curry Noodles.

Have you tried thai curries?

Spicing for Curries is a very individual thing hence one Person thinking such and such a restaurant is Great while another would not go there again. People especially Chefs on TV tend to go overboard with the thinking more spices makes a better flavour but all it does is make the Meal heavier.

One mixture which is underrated yet excellent for quick stir-fries is Panch Poran, another forgotten spice because its not fashionable is the King of Spices, Black pepper. Together with Dried Red chilli flakes a teaspoon per Person in a stir-fry is the bollocks. You can buy panch Poran but if not

1 TB/s Cumin Seeds
1 TB/s Fennel Seeds
1 TB/s Nigella/ Onion Seeds
1 TB/s Brown mustard Seeds
1/2 TB/s Fenugreek Seeds

For Two people add 1 Ts Black Pepper, 1 Ts Chilli Flakes, 2 ts of above, hammer in a pestle and add to the stir fry :drink:
