I can't say if they profile or not but it's safe to say they want younger people. Younger people tend to be less patient and make more brash decisions. Younger people tend to have less money though on the downside. A book could take more from a older square than a younger square in most cases because of the difference in bankroll.
I am sure most books have no idea how old their players are. One thing I notice over time is that young players are quick to change their judgement of a team, but in the end they are too quick. They see one game and change what they think of a team. Old people are generally the opposite, too stubborn to see a team isn't what they thought it was. Either way it works the same for a square mistakes are mistakes.
At the end of the day it comes down to who will give the book the money the fastest. They do not care if it is a 99 year old korean lady playing israeli basketball, once the money comes. Green is green does not matter who it comes from!The person with the least sense and the most dsiposable income wins hands down everytime.
