Here are some stats through the first 15 weeks of the regular season:

Referee, Penalties accepted per game, Penalty yards accepted per game, Yards per penalty accepted, total points scored, % home win rate(SU).

IMO.... analyzing the head referee stats for American football is pretty close to worthless, too ambiguous to really make links to future outcomes.

carollo only has 43% home wins where the other 3 are all in the 60's ...

Its another tool and it depends. If you think there is funny business going on in the NFL with certain crews it may be helpful. Also, if you were to really dig into these numbers there may be some interesting nuggets. For example, it would be interesting to look at all 16 games reffed by Carollo since the home team only won SU 43% of the time. What were the lines in those games? Were the majority road favorites and thus a higher probability the home team should lose? What if on average in his games the home team was favored by 6 or more points...if they only won 43% of the time being big favorites then it would certainly look odd.

The total point numbers may be more interesting to look at but again you have to dig into the numbers. For example, if the average O/U in Walt Anderson games was 44 and per the stats 38.7 points were scored then its a little out of whack.

Again its a tool and not the be all to end all. But looking further into the numbers may provide some interesting predictable data points or something else.
