Here is one of the best tips anyone can ever give you about charcoal grilling. Spend the $15 to 20 bucks and buy yourself one of these. Completely changed the way I grill. Fill it up with charcoal, crumble a piece of newspaper and put it underneath this device. Lite it and in 15 minutes you'll be ready to grill into a hot fire. But the best part of all is you no longer need to buy any lighter fluid. Or taste that lighter fluid taste in your food if you start grilling before it all burns away.

And for a real intense heat cook. Put another grate right on top of that chimney while its just finishing and cook your meat right on top of that thing. Nothing better than charring a nice steak on intense heat. Thats how a good steak is cooked in a fancy res truant. Very high heat.

Self proclaimed grill master here, fire it up minimum 4 times a week. Have always used charcoal, never owned a gas grill and never will. The shimney suggestion is great ides if u have problems getting fire lit. Coals provide most consistent heat. Have tried cooking on friends gas, it is just not the same. Also charcoal gives u a chance to enjoy some whiskey and a cigar while it is heating up.
