Well just because the US Open is postponed NOW, doesn't meant anything for what the weather will be like at 7:10pm.
While I think they will try to wait as long as they can to start the game (Probably around 9:10pm) because everyone's in a frenzy over this Jeter record, every weather site I've checked says 100% precipitation through the evening tonight.

Look at the direction the wind is pointing. Nasty conditions of course always hurts the better team(Ex. Could Federer beat you in straight sets in pure hurricane conditions? Bet my life he couldn't).
The under may be a play here given such huge winds blowing away from outfield towards home plate.

At 334 pm edt...national weather service doppler radar was tracking
showers capable of producing strong gusty winds and heavy rainfall
near captree state park...or near robert moses state park...and
moving northwest at 35 mph.
Additional showers will continue to move in off the atlantic coastal
waters through late this afternoon with the potential for heavy rain
and gusty winds.
Winds up to 40 mph and ponding of water on area roadways can be
expected with these showers. Motorists need to be on the lookout for
water covered roadways and slow down to avoid hydroplaning.
