hey doug,...i didnt go through this whole post(article) but i did want to say a couple things,........as i was growing up and as i actually got a degree and worked some of the finner places,..................its really wide open,.......there are some pasionate chefs,...there are some great restruants,....i hate to get all eateries linked into one common thought,.........generally i think that most places are fine,....yeah there are always things that need to be addressed,...but the one bad experience i saw,.....first hand mind you was,........oh probally back in early 90's,....someone sent this breakfast/lunch special back,....it was a ittalion frittata(sp?) basically an omlette type item,.........this lady who was a truely miserable person,......actually spit in it,............no lie,...just blew my mind,..........i dont doubt it happens but man,...to see her do that,...........wow,..always remembered that,...i didnt do much and for that i probally should have done something about it,.......but its a good example,....she was the one in charge,......tough when the manager/chef does that,.......and you are young/early in your career with little to no authority to do anything about it,..................well i doubt that person ever amounted to anything, but there are probally people out there who do it.
