For deals, look into Spirit Airlines. They have the cheapest airfare I have found, but it comes with catches of course. Don't pick seats - it's an additional $10/segment. The seats are TINY. They give you no leg room and they fit 6 rows in a plane designed for 5.
Also look at Allegiant Air - they fly to Vegas a bunch. You can find some bargain fares. They mainly fly out of lesser known airports and the airplanes are also old - which is why the fares are lower. You also have to pick your seat here too for a fee, although there is a way around this just by not picking a seat and letting them assign one for you.
Southwest is a good discount option too. Look at the DING fares. Those are the best deals.
For Hotels, I use hotelscombined.com to find rates for each night. If you're interesting in the Priceline/Hotwire route, look at BetterBidding.com. There's also a thread at Fatwallet that is very useful and will give you the winning price on a Priceline bid. It's linked below:

The LV Hilton has a deal where they will pay for your return airfare if you stay there. They also have 2 free breakfast buffets with this deal. You can find rooms for $49.99/night starting. Rates are cheap too. I would book this and book another hotel (MGM is very cheap right now) if you want to be somewhere nicer and on the strip.
