I'd suggest Teddy June. He has done well in the tourney and will likely give you more than just one game on days with bigger cards.
Last few years he has played about 25-30 games each year and has hit over 60%+. If you like to have action on about 40% of the tourney games than I would recommend tailing him.

This sounds good to me. Regardless of how many games are going on, my strategy is going to be following one guy. If I had followed one guy in basketball I probably would have won over the course of the season. Playing 15-20 games a Saturday got me absolutely killed a couple of times :>(
