Off Strip Restaurant Recs

Heading to Vegas soon, partner and I are looking for places to grab a nice meal but not on the strip, preferably. Any suggestions? Have heard:

Carson Kitchen
Esther Kitchen

Classic old-school Italian. The food and the service are both exceptional.

Could narrow it down to type of food, but here are some selections:

Bootleggers for old Las Vegas style and excellent Italian (between Mandalay and Southpoint)

Golden Steer...excellent, expensive steakhouse with lots of history...near Circus Circus

Lindo Michoacan (Henderson location) for a great city view and very good Mexican food

Cuba Cafe (on Tropicana)

Not a fan of Firefly.
For steak, try Via Brasil for picanha.
Nora's for Italian.

I know you said "off strip" but if you're looking for a romantic dinner for two - get an outside table at Mon Ami Gabi at Paris.
Surrounded by the neon lights of the strip, you'll have the Bellagio's dancing fountains as backdrop.
Every date I've been there with loved the cuisine and absolutely raved about the ambience.
Best comment, after we paused eating dinner to watch Bocellis' Con Te Petiro - "Thank you for giving me the kind of night most girls only dream about." (Chicks dig that water show for some reason, especially that song.)

You won't want to be at Mon Ami until long after F1...at least Dec15 or so.
