I think my wife calls it carpacio, very easy to do, and delicious if you're a carnivore.
Partially freeze a piece of tenderloin, just so its firm enough to cut easily, then cut it paper thin.
Add a layer of virgin olive oil, a bit of salt and pepper, lime juice, parmesan and capers to a small dish, then one layer of tenderloin. when done, keep adding more layers of each, top off the last layer of beef with more oil, lime, salt/pepper and capers. Back in the fridge and it's ready in minutes. Into a ziplock and the cooler before you go.
