I would ask Quantumleap of betallsports... these guys know how to cut with steak knives. I have seen it first hand

I would say find a local cutlery place(stay away from the over priced yuppy places) and don't spend alot of money. It may be true that you get what you pay for when it comes to knives, but if your just looking for general usage knives and not working in a restaurant I would go the cheap (price) route. I have Forschner's; they are reasonably priced and are perfect if your not looking for a flashy knife. You may be able to get them cheaper online.
