Shawn, give this a whirl.......24 soak in vinegar & onions(both of which help break down the fibers in the meat), and the sauce of your choice.

All I can say is KILLER!!!!....the meat will fall off the bones as long as you slow cook them.

if you're going to marinade them in vinegar -use red wine vinegar, apple juice is also good

As to your question, depends on the sauce or the rub.

The biggest mistake people make when BBQ ribs is to much sauce. You don't need to saturate the Ribs with Sauce to make them taste good. A decent coating is sufficent.

ttinco..................that recipe sounds straight out of the carolinas, in which I totally agree a great way to go. Personally I soak the ribs in a mix(50/50) of Guiness beer and coke, for three hours. The acid in the coke tenderize amd the beer for the flavor.God I'll have to go in the morning to get some Ribs.apple

Dry is best, IMO. If you don't have a lot of time, but want your ribs to fall off the bone, so to speak, you can boil them on high temperature for 45 minutes, then let them rest. Prepare your dry rub, then throw them on the grill for 10 - 15 minutes. Believe it or not, that is how many restaurants do them, but instead of boiling them, they might steam them.

You need to check out Texas BBQ Rub, it's available on-line, I swear by it. I know this won't help this weekend, but you need to check it out.

Putting some Ribs in the Smoker in a couple of hours myself.

Texas BBQ Rub - slow smoked w/apple wood( 5 - 6 hrs) then move to grill and baste with BBQ sauce.
